BLACK BEAN BURRITO RECIPE



Ingredients
  • 2 (10 inch) flour tortillas
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 1/2 red bell pepper, chopped
  • 1 teaspoon minced garlic
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 teaspoon minced jalapeno peppers
  • 3 ounces cream cheese
  • 1/2 teaspoon salt
  • 2 tablespoons chopped fresh cilantro


Directions
  • Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C). Bake for 15 minutes or until heated through.
  • Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
  • Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
  • Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately. ENJOY!

CHICKEN BURRITO


Ingredients:
• 1 Pound chicken breast, boneless, skinless, and cubed
• 16 Ounces refried beans
• 1 Cup enchilada sauce
• 1 Cup shredded cheddar cheese
• 2 Cups shredded lettuce
• 1/2 Cup sliced green onions
• Flour tortillas, burrito size

How to make Chicken Burrito:
Coat a skillet with vegetable oil.
Cook chopped chicken over high heat for about 5 minutes or until pink.
Stir in sauce.
Cook for additional 5 to 6 minutes on medium heat.
Mix the beans and cook for an additional 1 to 2 minutes.
Spread 1/2 cup of the mixture on each tortilla.
Top with shredded lettuce, green onion and cheese.
Fold into burritos.
Decorate it with salsa

BEEF AND BEAN BURRITO

Burrito Ingredients:
  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon dried leaf oregano, crumbled
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 can (16 ounces) refried beans
  • 1 can (10 ounces) enchilada sauce, divided
  • 6 (8-inch) flour tortillas
  • shredded lettuce
  • garnishes


Burrito Preparation:

In a large skillet over medium heat, cook ground beef, onion, and garlic until meat is browned, stirring often to break up meat. Drain well. Add chili powder, oregano, cumin, salt, and pepper; simmer for 10 minutes. Add refried beans and 1/2 cup of enchilada sauce. Heat thoroughly.
Wrap tortillas in foil and place in a 350° oven to heat for 10 minutes. Spoon about 1/2 cup of the ground beef mixture onto each tortilla; roll tightly and place seam-side down on serving platter lined with shredded lettuce. Spoon remaining enchilada sauce over tortillas. Garnish and serve with any of the following: shredded cheese, sliced ripe olives, chopped tomatoes, sour cream or guacamole, and more shredded lettuce. Burrito recipe makes 6 burritos and enyoy your Burrito.. :)

BEEF BURRITO RECIPE



Ingredients (serves 4)


  • 1 tablespoon olive oil
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 500g lean beef mince
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon chilli powder
  • 400g can diced tomatoes
  • 1 red capsicum, chopped
  • 2 tablespoons tomato paste
  • 1/3 cup beef stock
  • 300g can red kidney beans, drained, rinsed
  • 1/2 cup coriander leaves, chopped
  • 8 flour tortillas (see note)
  • 3/4 cup grated cheddar cheese
  • sour cream and salad leaves, to serve 


Method


Preheat oven to 200°C. Heat oil in a large frying pan over medium-high heat. Add onion and garlic. Cook, stirring occasionally, for 5 minutes or until onion is tender. Add mince. Cook, stirring, for 3 minutes or until browned.
Add cumin, paprika and chilli powder. Cook, stirring, for 1 minute or until aromatic. Add tomatoes, capsicum, tomato paste and stock. Bring to the boil. Reduce heat to medium-low. Simmer, uncovered, for 10 minutes or until sauce is thickened. Stir in beans and coriander.
Warm tortillas following directions on packet. Divide beef mixture between tortillas. Spread along centre of tortillas. Roll up to enclose filling. Place in a large, greased baking dish. Sprinkle with cheese.
Bake for 10 minutes or until cheese melts and burrito start to brown. Serve with sour cream and salad leaves.
Notes
Flour tortillas are a round flatbread made from wheat or finely-ground corn, traditionally used in Mexico to make burrito. They're also great cut into bite-sized pieces to use for dips.
